Irresistible Sweet Potato Chocolate Brownies

Brownie Batter:
● 3/4 cup mashed sweet potato (see directions below)
● 1/4 cup coconut sugar
● 1/4 cup maple syrup
● 1/4 cup cocoa powder
● 1/2 cup full-fat, canned coconut milk
● 1 cup white all-purpose flour
● 1 tsp vanilla extract
● 1 teaspoon baking powder
● 1/2 teaspoon salt
● 1 teaspoon baking soda
● 1 tablespoon Rice Vinegar
● 1/2 cup chocolate chips

 

Decadent Frosting:
● 1 cup mashed sweet potato
● 1/2 cup cocoa powder
● 1/2 cup maple syrup
● Generous pinch of salt

 

Instructions:
🍫Peel and dice about 2 medium sweet potatoes into 1” cubes. Cook in a saucepan with about 1 inch of water until soft. Drain excess water and mash with a fork until smooth.


🍫Combine mashed sweet potato, coconut sugar, maple syrup, cocoa powder, coconut milk, flour, vanilla extract, baking powder, salt, baking soda, and Rice Vinegar. Mix until smooth. Fold in chocolate chips with a spatula.


🍫Line a 7-inch square baking dish with parchment paper and pour in the brownie batter. Bake at 180° for approximately 30 minutes or until cooked through. Allow to cool before frosting.


🍫While the brownie cools make your frosting, and mix together mashed sweet potato, cocoa powder, maple syrup and, salt.


🍫Once the brownies have cooled, generously spread the luscious frosting over the top. Slice into bars and savour every chocolaty bite guilt-free!
