Simple Healthy Banana Cake
Ingredients:
- 1 3/4 cups plain flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp salt
- 1/3 cup olive or coconut oil
- 1/2 cup honey or maple syrup
- 2 eggs
- 1 cup mashed bananas (2-3 bananas)
- 1/4 cup milk or non-dairy alternative
- 1 tsp vanilla extract
- 1/2 cup walnuts (optional)
- 1 tsp cinnamon (optional)
Instructions:
1. Preheat oven to 350°F (175°C). Grease a 9-inch cake pan.
2. In one bowl, mix flour, baking soda, baking powder, salt, and cinnamon.
3. In another, combine oil, honey/maple syrup, eggs, bananas, milk, and vanilla.
4. Mix wet ingredients into dry, add walnuts if using. Don't overmix.
5. Pour into pan, bake 25-30 min. Test with a toothpick.
6. Cool in pan 10 min, then on a rack.
