Haricot / Navy Beans
Haricot / Navy Beans
Haricot Navy Beans are small, oval-shaped beans with a creamy white color and a mild flavor that easily absorbs the taste of the dishes they're added to. Sourced from Canada, these authentic beans are a versatile staple, perfect for a wide range of vegetarian recipes.
How to Use:
Haricot Navy Beans need to be softened before cooking. Soak them in cold water for at least 4 hours, then drain and rinse. Cook the soaked beans in fresh water by bringing them to a boil, then simmer for 60 to 90 minutes until tender. Once ready, they can be added to soups, salads, curries, or even used in vegetarian burgers and dips for extra nutrition and texture.

1 cup dried navy beans (or 2 cups canned navy beans, drained and rinsed)
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
2 carrots, chopped
2 celery stalks, chopped
4 cups vegetable broth
1 bay leaf
1 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley for garnish (optional)

Prepare the Beans: If using dried navy beans, soak them overnight in water, then drain and rinse. If using canned beans, simply drain and rinse them.
Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrots, and celery. Sauté until the vegetables are softened, about 5 minutes.
Add the Beans and Broth: Add the soaked or canned navy beans to the pot. Pour in the vegetable broth and add the bay leaf and dried thyme.
Simmer the Soup: Bring the mixture to a boil, then reduce the heat and let it simmer for about 1 hour (or 20 minutes if using canned beans) until the beans are tender.
Season and Serve: Remove the bay leaf and season the soup with salt and pepper to taste. Garnish with fresh parsley if desired.
Enjoy: Serve hot with crusty bread or a side salad for a hearty and nutritious meal.
Sustainability
Sustainability
Navy beans are a great choice for sustainable eating because they require relatively low water usage compared to other protein sources, such as meat. Additionally, they naturally enrich the soil by fixing nitrogen, reducing the need for chemical fertilisers. Opt for dried navy beans over canned to further reduce packaging waste and carbon footprint.
