How to use:
Green Lentils are eaten cooked. By soaking them first for 2 - 4 hours, you can reduce the cooking time and make them a little easier to digest. Soaked Green Lentils can also be added to hot pots directly without cooking. This lentil goes well with a variety of cooked recipes including curries, soups, and vegetables. To prepare Green Lentils for cooking simply soak them and boil then in a pot with water for around 40 minutes. This lentil is a popular ingredient in vegan burgers can you can also grind it to create besan flour for making even more recipes.

Ingredients:
1 cup green lentils, rinsed
2 cups vegetable broth or water
1 small onion, diced
2 cloves garlic, minced
1 carrot, diced
1 bay leaf
1 tsp cumin
Salt and pepper to taste
1 tbsp olive oil
Fresh parsley for garnish
Instructions:
Heat olive oil in a pot over medium heat. Add diced onion, garlic, and carrot, sautéing until softened.
Stir in the cumin, then add the green lentils, vegetable broth, and bay leaf.
Bring to a boil, then reduce heat to low and simmer for 25-30 minutes, or until lentils are tender.
Season with salt and pepper to taste, remove the bay leaf, and garnish with fresh parsley before serving. Enjoy as a side dish or over rice.
