Fig and Walnut Energy Bites
Ingredients:
- 1 cup dried figs, chopped
- 1/2 cup walnuts
- 1/4 cup almond butter
- 1/4 cup shredded coconut (plus extra for rolling)
- 1 tablespoon chia seeds
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions:
1. Add the chopped dried figs and walnuts to a food processor. Pulse until they are finely chopped.
2. Add almond butter, shredded coconut, chia seeds, vanilla extract, and salt to the processor. Blend until everything is well combined and forms a sticky dough.
3. Scoop out about a tablespoon of the mixture and roll it into a ball. Repeat with the remaining mixture.
4. Roll the energy bites in extra shredded coconut for added texture and flavor.
5. Store in the fridge for up to a week or freeze for longer storage.
