Ingredients:

- 2 tablespoons melted butter or oil
Instructions:
- Mix Together: In one bowl, mix 1 cup buckwheat flour, 1 tablespoon sugar (optional), 1 teaspoon baking powder, and 1/2 teaspoon salt.
- Combine: Add 1 beaten egg, 1 cup milk (any kind), and 2 tablespoons melted butter or oil. Stir until mixed but a bit lumpy.
- Cook: Heat a greased pan over medium. Pour 1/4 cup batter for each pancake. Cook until bubbles form (about 2-3 mins), then flip and cook 2 more mins.
- Serve: Enjoy warm with your favorite toppings.
