Apricot Almond Granola Bars
🥣 Ingredients:
2 cups of apricot, almond, and date granola
1/4 cup almond butter
1/4 cup honey or maple syrup
1/2 cup dried mixed berries (cranberries, blueberries, or cherries)
1/4 cup mixed seeds (sunflower, chia, or pumpkin)
1/4 cup chopped dried apricots
1/4 tsp salt
1/2 tsp cinnamon (optional)
Instructions:
🔥 Prepare the Base: In a small saucepan over low heat, gently warm the almond butter and honey or maple syrup, stirring until well combined. Remove from heat.
🥄 Mix: In a large bowl, combine the granola, mixed berries, seeds, chopped apricots, salt, and cinnamon. Pour the warmed almond butter mixture over the dry ingredients and stir until everything is coated.
🔲 Shape the Bars: Transfer the mixture into a lined 8x8 inch baking dish. Press down firmly using a spatula until the mixture is evenly spread and compact.
❄️ Chill and Set: Place in the fridge for at least 1-2 hours or until firm. Once set, remove from the dish and cut into bars or squares.
