Australian-grown Yellow Split Peas are typically small, yellow-colored half peas with a nutty taste, complemented by a rich yellow color. They have a firm, smooth texture and hold their shape when cooked, or they can be boiled until creamy and soft. Traditionally, dal recipe is made with them. But they're also great in soups and broths, casseroles, veggie burgers, and dips.

 

How to use:

Although soaking yellow split peas can shorten the cooking time, you don't necessarily have to soak them beforehand. If the split peas have not been soaked, rinse them several times in water. Add two times as much water or stock to the Yellow Split Peas. After bringing to a boil, reduce heat to medium, and let simmer for 45-60 minutes (90 minutes if not soaked) or until tender. Drain and the Yellow Split Peas are ready for use. When you are making soups, broth, or slow-cooked hotpots, sauté a few onions and aromatics in some oil before adding dried peas. If using meat, chicken, or veggies with fresh herbs, add them when split peas are ready. Add broth or another liquid and cook until ready.
