Lemon Poppy Seed Energy Bites
Ingredients:
• 1 cup rolled oats
• 2 tbsp poppy seeds
• 2 tbsp chia seeds
• 2 tbsp honey or maple syrup
• 1/4 cup almond butter
• Zest; juice of 1 lemon
• 1/2 tsp vanilla extract
• Pinch of salt
Instructions:
1. Mix oats, poppy seeds, chia seeds, and salt in a bowl.
2. Stir in almond butter, honey, lemon zest; juice, and vanilla.
3. Roll into small balls and chill for 30 mins.
Enjoy! Store in the fridge for up to a week.
