Simple Recipe – Tapioca Flour Pancakes
Ingredients:
• 1 cup Tapioca Flour
• 1/2 cup milk (or plant-based milk)
• 2 eggs
• 1/2 tsp baking powder
• 1 tbsp sugar (optional)
• A pinch of salt
• Butter or oil for cooking
Method:
1. In a bowl, whisk together the tapioca flour, baking powder, sugar, and salt.
2. Add the eggs and milk, then mix until smooth.
3. Heat a non-stick pan over medium heat and lightly grease with butter or oil.
4. Pour a small amount of batter into the pan and cook for 2-3 minutes on each side until golden brown.
