Simple Spelt Bread Recipe

- 500g Wholemeal Spelt Flour
- 300ml Warm Water
- 1 Packet (7g) Dry Yeast
- 1 Tsp Salt
- 1 Tbsp Olive Oil
- 1 Tbsp Honey or Maple Syrup (optional, for a touch of sweetness)


1. In a large mixing bowl, combine the warm water and yeast. Let it sit for about 5 minutes, until frothy.
2. Add the wholemeal spelt flour, salt, olive oil, and honey (if using) to the yeast mixture. Mix until a sticky dough forms.
3. Turn the dough out onto a floured surface and knead for about 10 minutes, until smooth and elastic. Add a little more flour if the dough is too sticky.
4. Place the dough in a greased bowl, covering it with a damp cloth. Let it rise in a warm place for 1 hour, or until doubled in size.
5. Preheat your oven to 220°C (428°F). Punch down the risen dough and shape it into a loaf. Place it on a baking tray lined with parchment paper.
6. Cover the dough again and let it rise for another 30 minutes.
7. Make a shallow cut along the top of your loaf with a sharp knife. This helps the bread expand as it bakes.
8. Bake in the preheated oven for 30-35 minutes, or until the bread sounds hollow when tapped on the bottom.
9. Remove the bread from the oven and let it cool on a wire rack before slicing.
