Sticky Macadamias with Roasted Carrots & Goats Cheese

Ingredients:
Carrots
- 2 Bunches of Dutch Carrots (or 3-4 Large carrots cut into strips/quarters)
- 5ml Olive Oil
- Pinch Salt to Season
(For this recipe smoked salt was used, however any flaked salt will work)
- 40-50g Goats cheese
Sticky Macadamias
- 1 Cup Macadamias
- 1 Tbsp Extra Virgin Olive Oil
- 1 Tbsp Raw Honey or Rice Malt Syrup
- ¼ Tsp Smoked Salt (or any flaked salt)
- ½ Tsp Fresh Rosemary (dried Rosemary will also work)
Instructions:
- Pre-heat oven to 180 degrees
- Line two baking trays and place to the side
- Place Macadamias in a medium bowl
- Pour over Oil, Honey, Rosemary & Salt and Toss through to combine
- Place onto lined baking tray and bake in the oven for 10-15 minutes or until lightly golden
- Whilst Macadamias are baking place carrots on the second baking tray and drizzle with Olive Oil & Salt and set aside.
- Once Macadamias are cooked, remove from the oven and set aside.
- Place carrots in the oven and bake for 15-20 minutes until just tender when poked with a fork
- Remove from the oven and place straight onto a Serving Platter
- Add Macadamias onto Carrots
- Top with Goats cheese and sprinkle with a little more fresh Rosemary & Salt.
