Not-Naughty Chocolate Chip Cookies

There's nothing better than a gooey chocolate chip cookie on a cold day, or anyday for that matter.
If you're looking for a healthier alternative that still delivers a decadent, devilish taste, this recipe is for you.
What makes these cookies more healthy is the cashews and almonds. The protein and natural fats will leave you'll feeling more satisfied after one (or two) cookies. So you won't feel the need to go back for that third, fourth or fifth cookie.
The best part is most of the ingredients are available from Gram*.
You will need
1 1/4 cups raw cashews*
1 1/4 cups ground almonds or almond meal*
1tsp vanilla
1/3 cup of brown sugar* (lightly compacted), maple or agave syrup
Pinch of salt*
1 egg beaten
1 cup dark or milk choc buttons*
1tsp bicarb soda*
Method
Place cashews in a mixer and blend until smooth. Stopping occasionally to scrape down the sides of your bowl. (If you want to skip this step, use cashew butter or tahini.)
Mix all remaining ingredients except egg and bicarb in a bowl until mixture comes together.
Put the mixture in the fridge, covered for a minimum of 30 minutes, 45-60 minutes is ideal.
Preheat your oven to 160' (fan-forced).
Remove your mixture from fridge, add the bicarb and the egg and mix until smooth.
Roll into balls and place on a tray lined with a reusable silicone baking mat. Bake for 11 minutes. Let rest for 10 minutes and sprinkle with extra flaked salt.
