Healthy Snacking: Peanut Butter & Date Balls

I'm constantly searching for healthy snacks to eat throughout the day that curb my cravings without spiking my blood glucose levels (and avoid the crash).

I usually can’t go past a protein ball.  The ingredients are easy to find in any bulk food store like Gram and they're super quick and easy to make.  All you need is an every-day blender, NutriBullet or ninja.

Ingredients


2 cups raw cashews from Gram Sustainable
3 tbsp of roasted peanut butter (I like dark roasted)
4 delicious dates from Gram (pip removed and soaked in hot water for 10 mins)
1-2 tbsp date water (more if needed for texture)
1 big scoop (30g) pea protein powder from Gram
1 tsp maca powder from Gram
1 tbsp vanilla essence or 1 tsp vanilla extract
2 tbsp maple syrup

Method


Blend all the ingredients together.  Roll into balls and set in the fridge (or freezer if you like them cold and crunchy like I do).

If you want to make them extra yummy, heat some extra peanut butter in a pot with some coconut butter and coat the balls.  Then roll them in buckwheat kernels or coconut flakes.
