Gram's Go-To Low-Sugar Gluten-Free Almond Butter Cookies

A few posts back we gave you our easy Almond Butter recipe.  Since then you've smothered it on everything you can think of and snacked on it by the spoonful.  

Well, the cookie gods have answered your prayers and below, we give you, Gram's Almond Butter Cookies.  

These cookies are so easy to make and use only 4 ingredients.  So they're brilliant for bakers of (almost) any age.  They're also low in sugar and totally gluten free.  So get that jar of Almond Butter from the fridge and turn on the oven, because in a few minutes you'll be gobbling these tasty treats.  

 

 

INGREDIENTS:

1 cup almond butter (we’re using our homemade almond butter from last week's recipe) 
1/3 cup coconut sugar, (blended into a powdered sugar, if possible)
1 large egg, lightly beaten
1 tsp vanilla extract
pinch of sea salt

 

METHOD

Preheat the oven to 180 degrees. 

Add all ingredients to a bowl and mix together with a spoon. 

Line a baking tray with baking paper (or use our reusable silicone baking mats) and dollop tablespoon-sized mounds of the batter onto the baking tray. Use your fingers to flatten the mounds. Then, use the back of a fork to create a crosshatch pattern on the cookies. 

Bake the cookies for 10-12 minutes. Let the cookies cool completely on the baking tray before transferring to a plate.
