Ingredients:
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 4 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 1/2 cup milk
- 1/2 cup chopped nuts (walnuts, pecans, or almonds)
- 1 cup mixed dried fruits (raisins, currants, cranberries)
Instructions:
1. Preheat your oven to 325°F (160°C). Grease and line a cake tin with parchment paper.
2. In a mixing bowl, cream together the butter and brown sugar until light and fluffy.
3. Add eggs one at a time, beating well after each addition.
4. Sift together the flour, baking powder, baking soda, cinnamon, nutmeg, and cloves in a separate bowl.
5. Gradually add the dry ingredients to the creamed mixture, alternating with the milk. Mix until well combined.
6. Fold in the chopped nuts, and dried fruits until evenly distributed throughout the batter.
7. Pour the batter into the prepared cake tin and smooth the top with a spatula.
8. Bake in the preheated oven for 1 to 1 1/2 hours, or until a toothpick inserted into the centre comes out clean.
9. Once baked, remove the cake from the oven and allow it to cool in the tin for 10-15 minutes. Then transfer it to a wire rack to cool completely.
10. Optionally, you can decorate the cake with a dusting of powdered sugar, icing, or royal icing and some extra dried fruits and nuts on top.
Remember, this cake tends to improve in flavour if made a few days ahead and kept wrapped in parchment paper in an airtight container. Enjoy your homemade Christmas delight!
