Ingredients:
1 cup of Apricot Coconut Slice cubes
1/2 cup almond butter (or any nut butter of your choice)
1/4 cup desiccated coconut (for rolling)
1/2 cup rolled oats
1-2 tbsp honey or maple syrup (optional for extra sweetness)
A pinch of sea salt
Instructions:
Mix Ingredients: In a mixing bowl, combine the cubed Apricot Coconut Slices, almond butter, oats, and a pinch of salt. If you'd like a sweeter taste, mix in the honey or maple syrup.
Form into Balls: Using your hands, roll the mixture into small, bite-sized balls.
Coat in Coconut: Roll each ball in desiccated coconut to coat.
Chill: Place the energy balls in the fridge for at least 30 minutes to firm up.
