Quick Navy Bean Soup
Ingredients:
1 cup dried navy beans (or 2 cups canned navy beans, drained and rinsed)
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
2 carrots, chopped
2 celery stalks, chopped
4 cups vegetable broth
1 bay leaf
1 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions:
Prepare the Beans: If using dried navy beans, soak them overnight in water, then drain and rinse. If using canned beans, simply drain and rinse them.
Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrots, and celery. Sauté until the vegetables are softened, about 5 minutes.
Add the Beans and Broth: Add the soaked or canned navy beans to the pot. Pour in the vegetable broth and add the bay leaf and dried thyme.
