Ingredients:
- 2 cups Rolled oats
- 3/4 cup Maple syrup
- 1 tsp Baking soda
- 1 tbsp Baking powder
- 1 tbsp Cinnamon
- 1/4 tsp Allspice
- 1 tsp Salt
- 3 eggs
- 2 tbsp Coconut oil
- 1/4 cup Applesauce
- 1/3 cup Greek yogurt
- 1 tsp Vanilla extract
Cinnamon Sugar Butter:
- 2 tsp Cinnamon
- 2 tbsp Sugar
- 1/2 cup Butter, softened
👩🍳 Instructions:
- Preheat oven to 180 degrees.
- Add the oats into a food processor or blender and blend into a fine flour.
- In a medium bowl, combine oat flour, baking soda, baking powder, cinnamon, allspice, and salt.
- In a separate bowl, whisk together eggs, coconut oil, applesauce, Greek yogurt, and vanilla extract until well combined. Then add the Maple syrup.
- Stir in the dry flour mixture until just combined. Let the batter rest for 5 minutes.
- Pour the batter into a greased loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the centre comes out clean.
- While the bread cools down, blend softened butter, cinnamon, and sugar in a bowl until smooth.
