These choc-coated peanut butter cheesecake bites taste like you’re eating a crunchie, but are packed with good, healthy nutrients. Proof that eating healthy doesn’t have to be boring and snacking doesn’t have to be bad.
So when you feel that 3pm afternoon slump kicking-in, instead of grabbing a biscuit or a chocolate from the cupboard - have some of these healthy treats at hand. Sugary snacks will leave you craving more processed sugar. But these PB Cheesecake Bites will give you longer-lasting energy thanks to their unprocessed whole foods, good fats and protein.
They're packed with goodness that can help stabilize blood sugar levels, help fuel your brain, and help you feel fuller for longer. You’ll also be the most popular person in your house.
Makes 12-13 bites
1 cup peanuts
1.5 cups raw cashews
¼ cup buckwheat kernels
1.5 scoops pea protein powder
1 tbsp coconut flour
3 dates, pitted and soaked for 10-15 minutes
¼ cup oat milk
¼ cup tahini (or blended sesame seeds)
1 tbsp vanilla extract
250g dark chocolate buttons
Blend all dry ingredients together (minus the chocolate) and set aside.
Using the same blender, mix all wet ingredients and once combined, add in the dry mix and blend until combined. It should be a dough-like consistency and quite firm, so add either a little more coconut flour or a tiny splash of almond milk as needed.
Roll into balls first, then shape into cubes (because cubed treats taste so much better than balls do) and place in the fridge for 10 minutes.
When time is almost up, add the chocolate into a double boiler (metal bowl over low boiling water) or into a microwave in 20 second spurts until all melted. Cover the protein bites in chocolate and sprinkle with buckinis.
